Avocado Salad Dressing


2 ripe avocados
Juice of 1 lemon
3 T mayo (because not all avocados are created equal)
1 T shallots minced

1 garlic clove  
Salt and pepper
1/4 C white wine or champagne vinegar

1/2 cup extra virgin olive oil

1 T fresh parsley chopped


1.       Cut Avocado in half, remove seed and scoop meat into a blender or food processor.

2.       Add lemon juice, garlic, mayonnaise and shallots to bowl and blend avocado mixture until smooth.

3.       Add salt and pepper, vinegar and pulse the mixture to blend. Slowly add olive oil to avocado mixture as it blends to finish dressing.  Add the cilantro and season with salt and pepper to taste.
